Blue Spirulina Chia Seed Pudding (Paleo, Vegan, Sugar-Free*)

Ingredient list (serves 2-4)

  • 1 can coconut milk (or ~2 cups of creamy non-dairy liquid)

  • 3 tablespoon water

  • 1-3 tablespoon sweetener (i.e. 1/2 teaspoon of 100% pure monkfruit for no-sugar)

  • 1/2 cup chia seeds

  • 1/2 teaspoon blue spirulina

  • Optional: pinch of sea salt

  • Optional: 1 teaspoon vanilla

Directions

With a Blender: Add everything to the blender, and blend for 1-2 minutes until it's well incorporated and starts to thicken. Pour the mixture from the blender into a glass container and let it sit. Mix occasionally for 15-30 minutes until it's pudding-like. 

Without a Blender: If you're not using a blender, add all the ingredients OTHER than the chia seeds into a large glass bowl. Combine until it's well-incorporated. Then, add the chia seeds and mix intermittently over the course of 15-30 minutes.

Final step - add toppings like berries, nuts, seeds, or coconut flakes!
